Oats are one of the healthiest grains around- chalk full of vitamins, minerals, fiber and anti-oxidants. Making them ahead of time allows you to easily start your day the right way
Overnight oats are a fabulous make ahead breakfast that are so satisfying and delicious, full of our favorite fall flavour- pumpkin spice! Since the word FALL, to me, also means PUMPKIN SPICE, I am putting out a few of my favorite, easy recipes for you all to enjoy. .
INGREDIENTS
- Oats
- Pumpkin Puree
- Pumpkin Pie Spice
- Milk of choice (I use almond or coconut)
- Coconut flakes
- Chia seeds
- Stevia or maple syrup
Mix all ingredients together and place in your favorite jar of storage container overnight. I love to top mine with a dollop of coconut whip cream or yogurt!!

Pumpkin Pie Overnight Oats
Pumpkin Pie overnight oats are a great way to make a healthy breakfast ready to be eaten in the morning, with minimal prep time. Start your day with a creamy and dreamy nutritiouos breakfast!
Ingredients
- PER JAR:
- 1/3 cup GF oats
- 2 tbsp chia seeds
- 4 tbsp pumpkin puree
- 1 tbsp coconut flakes
- 1 cup milk ( I use almond or coconut)
- 2-3 dropper fulls of stevia OR maple syrup
- 1 tsp pumpkin pie spice
Instructions
Combine all ingredients in a jar, mix or shake well and place in fridge overnight
Serve with a dollop of coconut whipcream or yogurt
