Here’s what you’ll need
Here’s what goes into this vibrant salad:
Salad Ingredients:
- Ripe avocados, diced
- Ripe tomatoes, chopped
- Small bulb fennel, thinly sliced
- Corn, grilled on the BBQ with butter and salt
Tajin Lime Dressing:
- Extra virgin olive oil
- Juice of a fresh lime

How to Grill Corn to Perfection
Grilling corn brings out its natural sweetness and adds a smoky depth that takes this salad to the next level. Brush each cob with butter, sprinkle with salt, and grill until charred in spots—about 10 minutes, turning occasionally. Let it cool slightly before slicing the kernels off the cob.

How to Make the Salad
- Prep the ingredients: Dice avocado, tomatoes, and thinly slice fennel. Remove grilled corn from the cobs.
- Make the dressing: In a small bowl, whisk together olive oil, lime juice, red wine vinegar, salt, pepper, and Tajin.
- Assemble: In a large bowl, gently combine all the ingredients. Drizzle with the dressing and toss carefully to coat.
- Serve immediately to enjoy the fresh flavors and texture.
Why This Salad Works
- Avocados bring creaminess and healthy fats.
- Tomatoes add juiciness and brightness.
- Grilled corn offers sweetness and charred flavor.
- Fennel adds a subtle crunch and mild licorice note.
- Tajin + lime give the dressing a tangy, spicy kick that brings it all together.
Every bite is balanced—creamy, crunchy, tangy, sweet, and spicy.

Serving Tips & Variations
- Serve immediately after tossing for best texture and flavor.
- Add crumbled feta or cotija for extra creaminess.
- Toss in chopped cilantro or fresh basil for an herbal twist.
- Want protein? Add grilled shrimp or shredded rotisserie chicken.
