Blueberry Jam Chia Pudding

Gluten-free, Dairy-free, Sugar-free

Chia seeds are a true superfood and that is why you hear all about them today! The beauty of these tiny seeds is they absorb the liquid they come into contact with, swelling and creating a gelatin-like substance.
Here are 6 good reasons to add chia seeds into your diet today:

Making this recipe is reallly easy and only takes a few minutes. Using a basic Vanilla chia seed pudding recipe and topping it with my homemade easy peasy blueberry jam.

Substituting ingredients is easy in this recipe. When it comes to the dairy-free milk, I use Almond, Cashew or Coconut. You can use any you like including rice, hemp and soy if that is your choice. I don’t incorporate too much soy in my diet due to the fact that is a highly GMO food, and I don’t recommend you do it either….but sometimes it fine! The sweetner in the chia pudding can be anything you have on hand, such as maple syrup, coconut sugar, honey, monk fruit sweetner. The reason I chose to use Swerve is because it mixes very well and disolves nicely and keeps this recipe sugar-free.

Layering the chia pudding give it this beautiful presentations that will wow your guests if you are serving it, and all that extra blueberry jam makes it so sweet and tasty! Alternatively you can just top the jam on the chia pudding. Don’t have time to make my easy peasy blueberry jam? Don’t worry, top it with fresh fruit or store bought sugar free jam instead.

Blueberry jam chia pudding

An easy vegan chia pudding recipe layered with delicious blueberry jam

Ingredients

  • For the Chia pudding:
  • 1 1/2 cups of Almond milk (or any non-dairy milk)
  • 1/2 cup chia seeds
  • 1-2 tbsp sweetner of choice (I used Swerve powdered sugar)
  • 2 tsp pure vanilla extract
  • For the Blueberry jam use recipe linked above or see body of text for alternatives

Instructions

Combine almond milk, chia seeds, swerve and vanilla in a mixing bowl

Stir until well combined

Chia seeds will take about 10-15 mins to swell and reach the pudding like consistency we are looking for

Using 3 small jars, scoop a small amount into the bottom of each jar

Top with a thin layer of blueberry jam

Scoop more chia into jar to cover the jam

Finish with another layer of blueberry jam
