Baked Banana Donuts-no oil, yeast or white flour!

(with optional chocolate glaze)

Gluten-free, Dairy-free, optional sugar-free

Serving these cute little donuts for breakfast is so much fun! Not only do they taste delicious, they are also made with easy and nutritious ingredients that the whole family will love!

If you love to have some healthy breakfast options stashed in the fridge then look no further. We love these banana donuts, they are so moist and tender, and packed full of flavor. The best part? They are good for you and super easy to make!

For this recipe I used some silicon donuts molds that I purchased on Amazon, and placed them on top of a baking sheet while baking so they stayed nice and moist. Even though they are silicon molds, I still brushed the inside with coconut oil to prevent sticking and subsequently breaking the cute little donuts!

The ingredients I used for this recipe are wholesome and simple, and they remain gluten-free and dairy-free as always. Grab the following ingredients to get started:

  • Bananas
  • Oat Flour
  • Egg
  • Vanilla
  • Baking powder and soda
  • Sugar of your choice

Using the sugar of your choice can make these banana breakfast donuts sugar-free if that’s what your prefer. I often use either coconut sugar or monk fruit sweetener and both work well. I have listed more option in the the recipe below.

How to make these Baked Breakfast Donuts

This is such an easy recipe that I don’ t even feel like I need to go into a lot of details, but if you are like me then you also love to look at pictures on how to do it.

These bake at 350 degrees for about 15 mins! After you make them once you will know if your oven needs them to stay in for 13 mins or maybe even 17 mins…..remember we want them soft and moist but not undercooked.

To glaze, or not to glaze, that is the question……

Sooooo I often just leave these delicious donuts unglazed because they are darn good I don’t always feel like they need it, and besides I often eat these for breakfast and feel so good eating them as is. However what is a donut without some sort of glaze or sugar topping? A good ole chocolate glaze would be the best, but a cinnamon and sugar topping is also FANTASTIC. Let’s look at how to make these if you prefer.

FOR THE CHOCOLATE GLAZE:

Get yourself about a half cups of dark chocolate chips, vegan if you need this to be dairy-free. Add to a flat bottom bowl with 1 tsp of coconut oil. Melt in the microwave at 30 second intervals stirring in between until chocolate is melted. Be sure not to overheat or the chocolate will seize. Dip your cooled donuts into the mixture, and set in the fridge

FOR THE CINAMMON SUGAR:

This one has different options depending on what sugar you would like to use. If you want it to be sugar-free then use monk fruit sweetener, coconut sugar will give it a nice taste or go with traditional granulated sugar. Mix about a third cup of sugar with one tablespoon of cinnamon together in a bowl. Since these donuts are not fried, they won’t be greasy and it will be hard to get the coating to stick. I use a coconut oil spray to lightly coat the tops, then dip in the cinnamon sugar. YUM!

The healthiest, most moist and delicious donut you will ever have! A great choice for breakfast or a snack, leave them plain or glaze them with chocolate or cinnamon sugar!

Ingredients

  • 2 ripe Bananas
  • 1 Egg
  • 0.5 cups Sugar of choice (options are coconut, regular brown sugar, swerve brown sugar or monk fruit sweetener)
  • 1 tsp Vanilla
  • 1.5 cups Oat Flour
  • 0.5 tsp Baking Soda
  • 0.5 tsp Baking Powder
  • ___________________________________________
  • For the chocolate glaze:
  • 0.5 cups vegan dark chocolate chips
  • 1 tsp coconut oil

Instructions

Pre-heat oven to 350 degrees

Grease silicon donuts molds with coconut oil. Place the molds on a baking sheet

Mash bananas, sugar, egg and vanilla. Mix well

Mix together the oat flour, baking powder and baking soda

Combine the wet ingredients with the dry ingredients until a nice batter is formed

Using a spoon, scoop in the batter to cover 8-10 of the donut molds. Bang your baking sheet once to remove air bubbles and make donuts even

Bake for 13-15 minutes, depending on your oven

Let cool for 10 minutes before gently removing them from your donut molds

If glazing, melt the chocolate and coconut oil in the microwave for 30-60 secs stirring often

Dip donuts into chocolate glaze, and set in the fridge

Store in the fridge for up to a week, or two months in the freezer
