Powerhouse Peanut Butter Pumpkin Bites!
These easy to make powerhouse balls are full of nutritious goodness that everyone in your house will love, and make you all feel energized and amazing!
Ingredients
- 1 cup Oats
- 1/4 cup Brazil Nuts
- 1/4 cup Pepitas (raw pumpkin seeds)
- 1/3 cup Natural Peanut Butter
- 1/4 cup Honey
- 3 Dried Figs
- 5 Dates
- OPTIONAL COATING:
- 1/2 cup vegan dark chocolate, white chocolate chips or coconut shredded
Instructions
Pour boiling water over the figs and dates, covering them completely. Set aside
Place oats, brazil nuts and pepitas in a blender and blend until a nice powder if formed.
In a saucepan, or microwave, melt honey and peanut butter slightly to soften them and combine
Add your figs and dates to the blender with the flour mixture, and blend until it is all well combined
Pour into bowl, add the softened peanut butter mixture, and using your hands, combine all the ingredients really well until a soft dough is made
Make roughly 24 balls from this mixture and set aside
Melt the dark chocolate (or white) gently in the microwave and drizzle over balls
Set in the refrigerator
Store in the fridge for two weeks, or in the freezer for three months
