Peanut Butter & Chocolate Frozen Banana Cuties (only 4 ingredients!)

Summer is here, hip hip hooray!! I scream, you scream we all scream for ice cream!! And bloating, and gas, and pain and intolerance. SIGHHHHH. When choosing to go dairy free for a variety of reasons (some of those reasons I just mentioned lol), I save the real ice cream for special occasions, and honestly today they do have amazing vegan options that taste just like real ice cream (thank you!!). But sometimes I just want a frozen treat at home, ready to eat that is sweet and delicious, bite sized and of course, nutritious.

These frozen cuties are literally the easiest thing to make, will take you about 5 minutes and are a great way to satisfy your sweet tooth on a hot summer day! Made with only 4 ingredients and no added sugar, I feel so good knowing I am putting something worthwhile into my body. And the kicker?? They are only 60 calories each! But remember calories are not the most important thing you need to focus on- it is the quality of the food and the nutrition content that should be your focus. But I was in need of loosing some additonal weight that I had gained, and I wanted to do it consciously by fueling my body with the nutrition it needs and understanding how much food and energy I actually need each day.

When making these, I like to line a mini muffin tin with papers as it makes it easier to remove them once frozen. I then remove the papers and place them in a silicon bag for easy access from the freezer (you can also store them in a tupperware, glass jar or ziplock). My philosophy is to stay away from plastic completely, from an environmental perspective as well as from a health perspective- did you know that plastics can leach harmful chemicals into the food it contains, wreching havoc on our system? For the best overall health, I would suggest you do the same!

How to make frozen cuties

It’s as easy as one-two-three!

  • Cut up your banana into the littlest pieces and place them in the lined mini muffin tin
  • Mix you PB2 with water and drizzle on top
  • Melt you chocolate with coconut oil and drizzle on top

Now how does that sound?? Ya I know…..

If you haven’t heard of PB2 yet, it’s a powdered form of peanut butter that has the oil separated from the nuts to create a powder. The reason I like to use this on occasion instead of just peanut butter is because it is much lower in fat. I especially like to add it to smoothies since I already add healthy fats such as flax and don’t want anymore added calories but want the PB flavour.

We like to eat these directly from the freezer, but you can let them sit for just a minute or two to soften a bit which is probably the best when giving it to younger children. Although for the kiddies it will last alot longer when they are frozen solid as they will have take their time enjoying it as it melts! This recipe makes about 10 frozen cuties, so feel free to double the batch so you can have extra handy in the freezer, ready to go!

A healthy frozen treat that is delicious and only requires 4 easy ingredients! Naturally sweetened with no added sugar!

Ingredients

  • 1/2 to 3/4 of a medium banana
  • 3 tbsp PB2 sugar-free peanut butter powder
  • 4 tbsp water
  • 1/2 cup Lilly's sugar free chocolate chips
  • 2 tbsp coconut oil

Instructions

Line paper cups into a mini muffin tin

Chop banana into very small pieces, and fill each cup about 1/4 of the way with your chopped banana

Mix the PB2 powder with water to form a liquid paste. Drizzle evenly between the muffin cups on top of banana

Melt chocolate chips with coconut oil using a double boiler. Once melted drizzle on top of PB2 layer in muffin cups

Place in freezer until frozen solid, about 2 hours

Remove from freezer and let sit about 5 mins until the paper becomes easier to remove. Remove all paper cups, and store the banana cuties in the freezer
