Healthy Chickpea Chocolate Chip Cookies — protein-packed, naturally sweetened with banana & maple syrup, perfect for toddlers and meal prep! Gluten & dairy-free.
Ingredients
- 1 can chickpeas, drained
- 1/4 cup almond butter
- 3/4 cup oats
- 1/2 cup maple syrup
- 1 tsp baking powder
- 1 banana
- 1/2 cup dark chocolate chips
Instructions
Pre-heat oven to 350 degrees celsius
Drain and thoroughly rinse can of chickpeas
To a blender, add chickpeas, almond butter, oats, maple syrup, banana and baking powder
Blend well until mixture is consistent and smooth
Stir in chocolate chips
To a lined baking tray, scoop mixture to create around 16 cookies
Using a spoon, press down and smooth out cookie to make them round (this may require a bit of water of the back of the spoon to prevent sticking)
Bake for 12 minutes, remove from oven and let cool completely before removing (about 1 hour)
