Panty items, nothing fancy, and so easy to make! Just grab the following ingredients and get cookin’

  • Very ripe bananas
  • Cottage cheese
  • Oat flour
  • White flour or 1-1 GF flour
  • Eggs
  • Vanilla extract
  • Baking powder
  • Chocolate chips
  • Butter for frying

1. Blend the Cottage Cheese

Add the cottage cheese to a blender and blend until smooth. This makes the pancakes light and fluffy with no curdled texture.

2. Combine the Wet Ingredients

In a large mixing bowl, mash the bananas until smooth. Whisk in the eggs, vanilla extract, and the blended cottage cheese.

3. Mix the Dry Ingredients

In a separate bowl, combine oat flour, white flour, and baking powder.

4. Bring It Together

Add the dry ingredients to the wet and stir until just combined. Fold in chocolate chips.

5. Cook the Pancakes

Heat a frying pan over medium heat and melt a little butter. Pour the batter into small circles and cook until bubbles form on top, then flip and cook for another 1–2 minutes.

High-protein cottage cheese banana chocolate chip pancakes – toddler-approved, naturally sweet, and freezer-friendly for quick, healthy breakfasts!

Ingredients

  • 2 very ripe bananas (the more spots, the sweeter!)
  • ½ cup cottage cheese (blended until smooth)
  • ½ cup oat flour
  • ½ cup all-purpose white flour OR sub 1-1 GF flour
  • 2 large eggs
  • 1 tbsp vanilla extract
  • 2 tsp baking powder
  • ¼-½ cup chocolate chips (or blueberries for a refined-sugar-free version)
  • Butter or oil for frying

Instructions

Add cottage cheese to a blender and blend until smooth. This creates a creamy base without the curdled texture
