Healthy Homemade Nutella

Growing up, Nutella was a staple in our household. Nutella to Italians is like peanut butter to North Americans! It goes on toast, crepes and any form of bread you can find. I loved it so much I would literally eat it by the spoonful. And to this day I still love it so much. What I don’t love about it anymore is the amount of oil and sugar found in the original recipe. So while having it occasionally for a special treat, I just don’t buy it anymore. But I didn’t want to stop eating it. So what do I do???

Make you own Nutella!

That’s right! I decided to make my own chocoalte hazelnut spread. And my version of this delicious spread doesn’t contain any refined sugar or oils, and is naturally sweetened with dates and stevia. It is so decadent and yummy that I now much prefer it over the storebought kind! This entire recipe only has 4 simple ingredients and takes no time to make. And once you try it I am sure you will be hooked like we are. It is still delicious on bread and crepes or pancakes, but I also like to use it on apple slices, banana slices and top it on hot oats. The best part about this spread is that it also contains a nice dose of nutrients too! Benefits of making homemade Nutella

Let’s first talk about the main ingredient in this recipe. HAZELNUTS. In my healthy makeover there is no palm oil, so I need to use more hazelnuts to fill the jar. This recipe calls for 4 cups of roasted hazelnuts, which are high in nutrients, protein and vitamins such as vitamin E, thiamin, magnesium, copper and manganese. With 2.7 grms of fiber in one ounce, you meet 11% of your RDI.

Next I add in medjool dates and stevia to add sweetness. The original Nutella recipe has quite a bit of sugar, and having had a previous sugar addiction (hahaha its a work in progress) I really try to find ways to eliminate it in my diet. I love to use stevia as it is a natural sweetener that doesn’t spike blood glucose levels and it goes well with the dates because then I don’t have too much date sugar in the recipe either. BALANCE my friends.

What you need to make homemade Nutella

  • A food processor
  • Hazelnuts
  • Cacao powder
  • Medjool Dates
  • Dark Chocolate chips
  • Stevia drops

When making homemade Nutella it is best to roast the hazelnuts first. This brings out the flavour and oils in the nuts, and loosens the skin so you can rub it off. I use a dish towel and shake them around really well until most of the skins just falls off. I then take them out gently and toss the skinless hazelnuts into the food processor. Keep in mind that there will always be some nuts that still have skin on them and that’s okay. This process will take the majority of it off.

Adding the dates with the hazelnuts and processing first makes this nice and creamy. The processing time takes quite awhile, and you will need to take breaks to let the hazelnut butter cool down, before starting to process again. It usually takes about 20 mins of processing and stopping before it turns into the creamiest hazelnut butter! Then it’s time to add in your cacao powder, melted chocolate and stevia drops- using hazelnut flavour stevia drops gives it an extra boost in flavour so I highly recommend using this too!

So let’s recap the key steps to making this easy and amazingly yummy healhty Nutella:

1- Roast the hazelnuts

2-Cool and add to dish towel. Rub them around until skins fall off

3- Add hazelnuts and dates to food processor and process for awhile, cooling down as needed

4- Once creamy, add cacao powder, melted chocolate and stevia. Process for another few minutes

5-Jar it!

An amazing and healthy version of the store bought Nutella that is 100% pure hazelnuts and contains no sugar. Creamy and decadent, the whole family will love it.

Ingredients

  • 4 cups Hazelnuts
  • 5 Medjool dates
  • 1/2 cup of cacao powder
  • 1/3 cup Lily's dark chocolate chips
  • 10 drops of hazelnut flavoured stevia

Instructions

Place the hazelnuts onto a baking sheet, and roast at 350 for about 20-25 minutes. Keep and eye on them and check after 10 and 15 minutes so they do not burn. You will see the skins starting to peel away from the nut

Remove hazelnuts from the oven and let cool completely. Usually about 30 minutes to an hour

Using a large dish towel, place hazelnuts in center of towel, cover nuts and move them all around under the towel. This peels away the skins

Take the skinless hazelnuts and place them in the food processor

Add medjool dates and turn processor to low speed. Allow to process for several minutes until you start to see a creamy consistency develop. You may need to stop and allow the processor to cool first as the total processing time can take up to 25 minutes

Once creamy, add in cacao, melted chocolate chips and stevia drops

Process again for 5 minutes to incorporate well

Pour into Jar
