Fudgy Avocado Double Chocolate Cookies

Gluten-free, Dairy-free, Sugar-free, optional vegan

Avocados are all the craze these days, and its no wonder why! They are creamy and delicious and pack a powerful punch! Growing up, we would eat these in our salads and usually only on special occasions, and I would gobble them all up. Now we have the luxury to eat them as often as we want as they are so abundant in the grocery stores. We have also expanded their use as a simple vegetable (even though they are really a fruit but we eat them like a vegetable) into many different types of desserts!!! That’s because they contain an oil that lends a great creamy texture into whatever you choose to bake it into.

Instead of chucking your avocados when they have ripened too much or turned a little brown, make this recipe instead!!

Here is a little trick…… you know how one day the avocados are perfect and then the next day…boom! they are brown and too ripe to eat. This happens to me too so don’t worry, just turn them into these fudgy gluten free avocado chocolate cookies.
With all the healthy fats in the avocado, they come out super fudgy and chewy and taste oh so decadent!

I choose to make these cookies sugar-free by using Monk Fruit crystal sweetener. However you can substitute an equal amount of any other sugar you prefer such as coconut sugar or cane sugar, or stevia.

Large Ripe Avocado:
High in healthy fats, particularly monounsaturated fat.
Rich in vitamins C, E, K, and B-6, and minerals like potassium and magnesium.
Can help improve cholesterol levels.
Flax Egg:
High in omega-3 fatty acids, good for heart health.
Rich in dietary fiber, aiding in digestion.
Contains lignans, which have antioxidant properties.
Vanilla:
Contains antioxidants.
Can have anti-inflammatory properties.
May help reduce anxiety and elevate mood.
Cacao Powder:
High in antioxidants, particularly flavonoids, which can improve heart health.
Can improve blood flow and lower blood pressure.
Might boost mood and cognitive performance due to its theobromine content.
Almond Flour:
Gluten-free and low in carbohydrates, suitable for gluten-free and low-carb diets.
High in vitamin E, magnesium, and fiber.
Can help control blood sugar levels.
Collagen Powder (please omit if you want a vegan cookie, see sub notes below):
Supports skin health by potentially improving elasticity and hydration.
Can aid joint health by maintaining the integrity of cartilage.
Might contribute to bone health and muscle mass maintenance.
Monk Fruit Sweetener:
A natural sweetener with zero calories and carbohydrates, making it diabetic-friendly.
Does not affect blood sugar levels.
Contains compounds that are antioxidants.
Dark Chocolate Chips:
Contain flavonoids, which have antioxidant and anti-inflammatory effects.
Can improve heart health by lowering blood pressure and improving blood flow.
May enhance brain function by increasing blood flow to the brain.

When ever I use a flax egg in my recipe, I make that first so it has time to congeal. Using a 3-1 ratio of ground flax to water, and allowing it to sit for around 10 minutes until the mixture looks like slime.

Mash the avocado as well as you can, you don’t want any green lumps hiding in these cookies! Then take your dry ingredients, combine them in one bowl, mix your mashed avocado together with the flax egg and vanilla. Add to your dry ingredients and mix it really well so it forms a dough.

These cookies don’t spread out when baking, and wetting your hands slightly helps pat them down to the shape you want.

PST: I used Organika collagen powder in these to give them a boost, but you can easily omit it if you don’t have any and replace with the same amount of almond flour. This will also make your cookies vegan 🙂

Be sure not to overcook them if you want to keep that fudgy texture!!

A fudgy chocolate cookie made with avocado with a sugar free option! A healthy treat that is so decadent and loaded with healthy nutrients!

Ingredients

  • 1 large ripe avocado
  • 1 flax egg (1 tbsp ground flax with 3 tbsp water)
  • 1 tsp vanilla
  • 1/2 cup cacao powder
  • 1/2 cup almond flour
  • 1/4 cup collagen powder
  • 3/4 cup monk fruit sweetener
  • 1 tsp baking powder
  • 1/2 cup dark chocolate chips

Instructions

Pre-heat oven to 350 degrees and line a baking sheet with parchment or silicon mat

Make your flax egg by combining 1 tbsp of ground flax and 3 tbsp of water. Let sit for 10 mins or until it has formed a gel

Mash your avocado well, and add in the flax egg and vanilla

In a separate bowl, combine the almond flour, cacao, superfoods (if using), monk fruit and baking powder and mix well

Add dry ingredients to wet ingredients and mix well. Add in chocolate chips and mix

Scoop onto baking sheet, pat down slightly to form a round shape

Bake for 10 mins, turn off the oven and let sit for an addtional 5 mins

Let cool for 2 hours before serving
