Chewy Chocolate Peanut Butter Coconut Cups

Gluten-free, Vegan, Refined sugar-free

When it comes to making easy and healthy snacks that don’t require any baking, I’m all in. Especially when it includes peanut butter and chocolate!! These cups are decadent and delicious, have the options of dark AND white chocolate, and are a great snack that can keep for weeks- if they even last that long.

No bake treats are a great way to save time, especially if you are a busy mom like I am, and need some healthy snacks to keep you fueled throughout the day. These cups would be excellent for the little ones as well, but I would omit the monk fruit sweetener, or replace with coconut sugar instead 🙂

This recipe only requires 6 simple ingredients- however if you are not a fan of the white chocolate and want only dark chocolate, then you are now down to 5 simple ingredients.

What goes in these Chewy Chocolate Peanut Butter Coconut cups

The name really says it all, but there is a sneaky addition that make this treat an extra healthy option, loaded with nutrients, vitamins and mineralsDATE PASTE! For the recipe click on the link to head over to that blog post.

In addition to the date paste you will need the following healthy ingredients!

  • Natural Peanut Butter
  • Coconut flour
  • Monk fruit sweetener (optional)
  • White vegan chocolate chips (or regular if you are not vegan or dairy free)
  • Dark vegan chocolate chips (or regular if you are not vegan or dairy free)

Date paste is a versatile sweetener that can be used in coffees, desserts, smoothies and any items you like. Dates are high in fiber, potassium and several minerals and vitamins

Making these cups is a cinch. Line your muffin tin with paper or silicon cups for easy removal. Combine your base ingredients, and press firmly into the bottom of the cups using the back of a spoon. Melt your chocolate chips with a little more peanut butter and pour over the base. Pop it into the freezer to set and voila! Easy right???

Store these in the fridge for as long as you like, the ingredients are shelf stable and therefore will last awhile. However you will eat them quickly and feel amazing doing so!!

A no bake, decadent and guilt free treat made two ways- with dark chocolate and white chocolate!

Ingredients

  • 1 cup natural peanut butter
  • 1/2 cup date paste
  • 2 tbsp monk fruit sweetener
  • 1/3 cup coconut flour
  • 1/2 cup vegan dark chocolate chips
  • 1/2 cup vegan white chocolate chips

Instructions

Line a muffin tray with 12 liners

Put aside two tablespoons of peanut butter, then mix together the rest of the peanut butter, date paste, monk fruit and coconut flour. Mix well until all is combined.

Divide the base mixture among the 12 cups and press down firmly using the back of a spoon

In two individual cups, add the vegan white chocolate chips and vegan dark chocolate chips along with a tsp of peanut butter, and melt in the microwave with 30 second intervals and stirring between each one, until the chocolate chips are completely melted.

Drizzle on top of the base, 6 white chocolate and 6 dark chocolate

Place in the freezer to set for 30 minutes.

Remove from freezer, peel liners and store in an airtight container in the fridge.

Will last for several weeks refrigerated.
