Mini Oatmeal Chocolate Chip Muffins

Gluten-free, Vegan, Refined Sugar-free

An easy to make ahead mini muffin that is wonderfully nutrient dense, super moist and chocolatey!

Mini muffins are simply the best!!! Bite sized for those days you don’t want a whole muffin, super cute, perfect for kids and all around just perfectly presentable when stacking on a plate for company. Perfect for serving at brunch, as an afternoon snack and to take with you on the road. The best part? They are healthy, naturally sweetened and free of gluten, dairy and eggs.

Why is it important to eat healthy? And is gluten free really needed?? I get asked these questions all the time, and my simple answer is yes. Our bodies need nutrients to thrive, to give us energy, to prevent diseases and make us feel good. Today, our soils are so depleted of nutrients due to over farming, we really too often rely on pre-made or packaged goods that are completely devoid of anything beneficial. We complain we are tired, some of us run into some serious episodes of psoriasis, eczema, auto-immune diseases and cancers keep rising, dementia and alzheimers are way too prevelant. Nutrition is ONE of the important keys to addressing this head first. Our bodie NEEDS nutritients (vitamins, minerals, amino acids) for the biliions of metabolic and physiological processes that occur everyday. The literature on the correlation between nutrition and health is out there, and if you want to keep your body and soul nourished and feeling VIBRANT for as long as possible, then yes, eating healthy is important.

When it comes to gluten, I think it’s okay to have nice wheat pasta, or a traditional pizza sometimes, but often gluten is associated with white refined flours with added sugars, and overtime if you are eating this frequently, that is not good for you. AND if you have any underlying auto-immune issues (psoriasis, eczema, thyroid problems) or have family members suffering from alzheimers or demetia, then I highly recommend considering replacing your gluten foods with healthier options. You do want to fee VIBRANT RIGHT??? Me too 🙂 So let’s start by making recipes that fills the gap in nutrition on traditional muffins, and make these healthy mini muffins.

The reason I like mini muffins is because their size is perfect for those days when you are hungry, but not starving. Plus I think they are really cute. It requires just a small muffin tin to make, and the whole recipe pops out about 28 muffins. You can easily half the recipe to make 12-15, but these freeze really well so why not stock up? However, they likely won’t last and will be gobbled up quickly. They are moist and chocolatey and taste like a nice treat. Breakfast inspirations are hard to come by, we wake up, have to get ready for work, take care of kids, fix up things around the house and so who has time to whip up something good when you wake up? These are perferct for that time.

When I put together a recipe, I often go over it several times before posting, and need to make some changes or tweaks. But with this recipe, the first one, was the right one, and I didn’t have to make any changes at all! It’s so exciting when I make it for a second and third time and it comes out just right. I used bananas in this recipe as a sweetener and a binder (allowing me to make it without egss), and it also gives it a nice moist texture. I don’t find it has a strong taste of bananas either, overall it was fun to create and ever better to eat! I also add in maple syrup, but I often sub in the pyure sugar free maple syrup if I want to keep it a little lower in calories. I choose Pyure maple syrup because it uses stevia- which in my opinion is the best and safest sweetener around! I also use Lilly’s chocolate chips at times, which are also sweetened with stevia. But any mini chocolate chips will do as long as they are dark chocolate- or you can simply omit them and they still come out perfect and delicious as a plain mini oatmeal muffin!

Mini Oatmeal Chocolate Chip Muffins

A perfect size mini muffin that is moist and delicious made gluten-free, without refined sugar and eggs, this easy recipe will please everyone!

Ingredients

  • 2 overripe bananas
  • 2/3 cup nut butter (any will do)
  • 1/2 cup maple syrup
  • 1 tbsp vanilla
  • 3 cups GF oats
  • 2 tsp baking soda
  • 1/2 cup mini dark chocolate chips

Instructions

Pre-heat oven to 350

In a mixing bowl, mash bananas and add in the nut butter, maple syrup and vanilla

Mix all the above ingredients really well so they are nicely combined

In a separate bowl, combine your oats, baking soda and chocolate chips.

Add the dry ingredients to your banana mixture and mix well

Scoop into well greased or lined mini muffin tins, pressing down to ensure the cups are fully filled since the mixture is more firm than liquid

Bake for 10 minutes

Carefully remove from muffin tin, allow to cool slightly before serving

Can keep in fridge up to two weeks. Serve and enjoy?
