Goey PB Chocolate Chip Cookies

I am always on the prowl for a good chocolate chip cookie that is healthier, has no gluten or dairy or eggs, and I am constantly testing out different recipes, with different ingredients in my kitchen. Just the smelll of a baking cookies in the oven can fill your senses and bring back memories of childhood, driving by a bakery or being at grandma’s house. Now wouldn’t it be nice knowing that smelling these cookies, which leads to wanting to eat one, which leads to actually eating one, (or two…. or three haha) won’t make you feel as guilty sincy they are made with wholesome and nutrient dense ingredients, and skips the butter and flour all together???
I THOUGHT SO!!!!
I mean, look at these soft, chewy mounds of mouth watering sweetness.

I make this recipe with just a few simple ingredients.

  • Gluten-free Oats are the base for these cookies
  • Creamy organic natural peanut butter- make sure to use organic as peanuts are heavily sprayed and natural unsweetned since we add maple syrup!
  • Dark Vegan chocolate chips
  • Flax eggs- to make a flax egg use 1 tbsp of ground flax with 3 tbsp of water and let it sit for at least ten minutes to ensure all the water is absorbed

If you can’t change the world with chocolate chip cookies,how can you change the world??

Use one bowl to make these to save time, and add your wet ingredients first, combine well then you can toss in your dry ingredients. So simple. So delicious. If you have kids they will love these as a healthy after school snack but adults alike will devour them!!! We do!!!

A gluten free and vegan recipe for the softest and goey chocolate chip cookie, made with just a few simple ingredients! Sure to please any crowd.

Ingredients

  • 1 cup of GF oats
  • 1 cup of organic creamy peanut butter
  • 1/2 cup maple syrup
  • 2 flax eggs
  • 1 tsp baking powder
  • 1 tsp vanilla
  • 3/4 cup dark vegan chocolate chips

Instructions

Pre-heat oven to 350 Degrees Celsius

Make your flax eggs by combining 2 tbsp of ground flax with 6 tbsp of water. Let sit for at least 10 minutes

In a bowl, combine the peanut butter, maple syrup and vanilla and mix to combine

Add your flax eggs and mix well

Add oats, baking powder and chocolate chips

Scoop a spoonful onto a baking sheet lines with parchment or silicon mat. Do not press down as these will spread out when cooking

Bake for about 10 mins or to your liking. If you prefer them softer than go for 8 mins, and if you prefer them a little more well done, then go for 10-12 mins
