Brownie Bites

Gluten-free, Dairy-free, Vegan

Okay friends. Who likes brownies? I DO! Who loves chocolate? I DO! Who loves easy to make no bake healthy versions of chocolate brownies? WE DO!
Do I really need to write anything else in this post? Probably not but I will anyway cause I like to talk 🙂
These brownie bites are one of my go to recipes. I have made them a bunch of times because they are easy, require only a handful of ingredients and are just soooooo yummy. Using medjool dates for this recipe gives it a really nice flavour and the goey texture that so many people love in regular brownies. Plus medjool dates taste like caramel and makes these bites perfectly nice and sweet.

Any recipe that doesn’t require baking is a win for me since you save so much time. These are so fun to make with kids and they can help you roll them into balls or dip them in the melted chocolate. You may not always want to dip them into the melted chocolate, and they are great without it too, but I do highly recommend becasue it puts this recipe over the top on choclate chewy goodness!

There are a ton of health benefits to these desserts, that I wonder if they should be called a dessert at all!! You could easily eat these for breakfast, use it as fuel before or during workouts and use it as an after school snack.

Here is why making these, and keeping them handy at ALL TIMES in your fridge is a must:

  • Dates are packed with fibre, are a natural energy booster & high in calcium and antioxidants
  • Hemp seeds are rich in Omega-3 and Omega-6 fatty acids.  They are high in protein, a great source of Vitamin E, potassium, magnesium, calcium, iron and zinc
  • Walnuts are rich in polyphenols, omega-3 fatty acids, copper, manganese, molybdenum and biotin (Great for hair!)
  • Cacao is a real superfood with high amounts of polyphenols, has fibre and protein plus micronutrients such as magnesium, potassium, copper and maganese
  • Coconut flour is naturally gluten-free, rich in fiber and MCT’s.. It is low in sugar and calories

To make these brownie bites, you will need a blender to mash up the dates into a paste. This is why using specifically medjool dates is important because they have more meat, and are chewier than regular dates and really work well for these types of desserts. I like to soak the dates in boiling water for about 10 minutes, then add them to the blender with the coconut milk and vanilla. Coconut milk is sweeter than other non-dairy milks and that’s why it works really well in this recipe, but really any non-dairy milk will work just fine! You will have to stop the blender often and scrap down the sides to help combine the dates and puree them. Once you have created a good paste, add it to a bowl and mix in the rest of your ingredients.

Finally, I like to coat these with melted dark choclate chips, because, well, its delicious! However this step can be omitted if you want to make it a littel easier, and you will love them just the same!!

A healthy brownie balls that is great for dessert or snack!

Ingredients

  • 1/2 cup of coconut flour
  • 1/4 cup coconut milk
  • 1 cup medjool dates
  • 2 tbsp cacao
  • 2 tbsp almond butter
  • 1 tsp vanilla
  • 2 tbsp hemp seeds
  • 3 tbsp walnuts
  • 1/2 dark vegan chocolate chips
  • 1 tbsp coconut oil OR 3 tbsp non dairy milk

Instructions

Add dates to a glass jar or bowl, and pour boiling water to cover. Let sit for 10 minutes then drain well

Add dates to blender with coconut milk and vanilla. Blend, stopping to scrap down the sides often until you reach a paste like consistency

Remove paste from blender and add to bowl. Stir in your almond butter and combine well

Sift coconut flour into bowl and mix well until a dough forms

Add in hemp seeds and walnuts until combined

Roll into small balls and place on wax or parchment paper

Melt dark chocolate chips and coconut oil (or non dairy milk), and coat half of the side of each ball

Refrigerate until chocolate has hardened then store in airtight container
