Oatmeal Chocolate Chip Bliss Balls

These bliss balls are super easy to put together since they don’t need a food processor, they require no baking, and all the ingredients are usually pantry staples. And of course it has the best combination to every exist to mankind….. PEANUT BUTTER AND CHOCOLATE! I mean anything that has peanut butter and chocolate, is, in my opinion, a little piece of heaven. Or a big piece!

When making this recipe, I melt the honey and coconut oil so it combines better, but I find that when I go to roll it they might be a little soft and end up being more like a glob rather than a ball. What works best is to scoop the size you want onto a cutting board, then putting it into the fridge for a 25 minutes or so. This way the ingredients will solidify and you will now be able to roll them into perfect little treats.

When making them, mix the wet ingredients first to ensure it is all well combined- in the pic above I have the peanut butter, honey and coconut oil together. Then add in the oats, shredded coconut and chocolate chips and mix really well!



You might just want to eat it directly out of the bowl!

The last step is to take your globs on a was or parchment covered board and pop it into the fridge for a bit to let them harden- that’s when it will be easy to roll into balls.

*If you or someone has an aversion to the taste of coconut, try them first because you cannot taste coconut AT ALL- it only adds to the sweetness of the recipe. However you can also ommit or substitue with more oats or nuts of your choice.
These are a great snack for kids after school because they are cute and fun to eat, but mostly because they taste just like a peanut butter and oatmeal chocolate chip cookie- SANS baking. When it’s a hot summer this is especially nice to make.

No bake easy treats that seriously tastes so good they won't last long at all!

Ingredients

  • 1 cup GF oats
  • 2/3 cup shredded coconut *see notes in body of post
  • 3/4 cup natural organic peanut butter
  • 1/3 cup melted honey
  • 2 tbsp coconut oil, melted
  • 3/4 cup dark vegan chocolate chips

Instructions

Combine melted honey, peanut butter and melted coconut oil.

Add in oats and shredded coconut

Mix in chocolate chips until combined

Using a spoon, scoop out enough to form balls of your liking. If the mixture is too soft due to the melted honey and coconut oil, place the "glob" on a wax paper lined cutting board, then place in the fridge for about 25mins or until hard enought to roll.

Roll into balls and store in fridge.
