Getting ready for the holidays is no joke, and having your baking ready ahead of time is such a time saver and makes your life so much easier! I’m happy to report that this cookie recipe freezes so well! I make them 3 weeks ahead of Christmas day, and when I take them out to serve, they still taste as fresh and delicious as if they were just cooked that day.
To Store:
Use an airtight container and keep it in the freezer for up to 3 weeks. You can always keep them longer if needed. Be sure to always let them cool completely before putting them in the container. AT least 2 hours.
Making them ahead and baking when ready:
If you prefer to make things fresh (and have the time!) then you can keep the dough in the refrigerator for up to 2 days ahead, then bake when you are ready to serve. This gluten-free ginger molasses cookie recipe is still best when you let them rest for an hour or two before serving, rather than straight out of the oven.

Perfectly Chewy Ginger Molasses Cookies- gluten-free & dairy-free!
Soft, chewy gluten-free & dairy-free ginger molasses cookies! Packed with warm spices, perfect for holidays, & easy to bake. A festive treat everyone can enjoy!
Ingredients
- 1¼ cups gluten-free flour
- 1 cup almond flour
- ½ cup vegan butter
- ¼ cup molasses
- ¾ cup brown sugar
- 1 egg
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tbsp starch (tapioca or corn)
- 1 tsp cinnamon
- ½ tsp ground ginger
- ½ tsp ground cloves
- ¼ tsp xanthan gum
- White sugar for rolling
Instructions
In a medium bowl, whisk together the gluten-free flour, almond flour, xanthan gum, cinnamon, ginger, cloves, baking soda, baking powder, and starch.
In a separate large bowl, cream the vegan butter and brown sugar until light and fluffy. Add the molasses and mix well. Beat in the egg until fully combined.
Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. Cover and refrigerate the dough for 20 minutes.
Roll the chilled dough into golf ball-sized portions, then roll each ball in white sugar. Place them on a baking sheet lined with parchment paper.
Refrigerate the cookie balls on the baking sheet for another 20 minutes to ensure they hold their shape while baking.
Preheat the oven to 350°F. Bake the cookies for 12 minutes, or until the edges are just set.
Let the cookies cool completely on the baking sheet before transferring them to a cooling rack.
