Healthy Homemade Vanilla Almond Cookie Butter

gluten-free, vegan, refined-sugar, oil-free

You can dig into this cookie butter as much as you want without the guilt! This recipe is mostly almonds, but the added dates and vanilla turn it into the best tasting cookie flavor ever!

If you like all sorts of nut butters, and want a little twist on what you are making, and by twist I mean a sweet and satisfying twist, then you definitely need to make this vanilla almond cookie butter! The best part is that there is no added refined sugar, we use dates to sweeten it naturally, and the dates also give it a natural caramel flavor perfect for that cookie butter flavor we love so much.

I have really been into making nut butters lately, and my favorite part is being able to save money because I buy the nuts in bulk from Costco. My absolute favorite is still my chocolate hazelnut spread, because, well, Nutella?? So if you haven’t tried that yet I suggest you head there next to make some Homemade Healthy Nutella. HAHAHA. But this recipe comes in a close second so far. I mean look at that creamy texture.

What’s so amazing about this Almond butter is that it doesn’t come with any added oils and is so healthy because it only has 3 clean ingredients; almonds, medjool dates and real vanilla. Packed with fiber, protein, healthy fats, vitamin E and magnesium, you should feel good about putting this in you body. To make it is really easy. Do you have a food processor at home? This is the best way to process the nuts and dates together and achieve that rich and creamy texture!

To get the nice fresh cookie butter flavor its really important that you roast your almonds well in the oven first. It makes the cookie almond butter a little darker, a little sweeter and little more consistent of a nice fresh baked cookie.

Be sure to be patient with the processing, it can take several minutes before you get that creaminess and don’t forget to stop a couple times and scrap the sides of the bowl! I promise this is going to be easier than you ever imagined, and you will ask yourself why you ever bought any sort of nut butter from the store at all!

An easy to make almond butter that tastes like cookies!

Ingredients

  • 4 cups Almonds
  • 6 Medjool dates
  • 2 tsp pure vanilla

Instructions

Pre-heat oven to 325 degrees

Place almonds on a roasting pan and toast in the oven for 10-15 minutes, or until the almonds have darkened slightly. Remove from oven and let cool

Remove pits from the medjool dates, and toasted almonds, dates and vanilla into a food processor

Process on high for up to 15 minutes, stopping to scrap down the sides

The butter will be done once it is creamy and smooth

Store in a glass jar for several month!
